Elle favorise les produits de terroir, biologiques, issus du commerce équitable ou bénéficiant de labels de qualité, tout en veillant au bien-être animal et au respect des objectifs de la loi Egalim. Le lot n°19 est réservé à des structures d'insertion par l'activité économique mentionnées à l'article L. 5132-4 du Code du travail et à des structures équivalentes, lorsqu'elles emploient une proportion minimale, fixée par voie réglementaire, de travailleurs défavorisés.
