The European project called INNOCAT — Procurement of eco-innovative catering products and services, led by ICLEI in partnership with the City of Turin, aims to implement coordinated tenders designed to introduce eco-innovative elements in the collective catering sector, within the framework of a European partnership between public and private buyers.
This initiative gives the City of Turin an opportunity to broaden its experience in the field of green tenders for school catering and a chance to see if there is room for further eco-friendly innovations in its services.
On account of the very nature of the activities involved, in fact, the catering sector has a major impact on the environment. In this connection, also through an analysis and targeted discussions in the pre-tender phase with subjects involved in the supply chain, the project aims to promote the adoption of innovative solutions that can minimise the environmental loads generated by the catering service along its entire life cycle. Possible improvements include: reduced generation of waste and packaging materials, use of more energy efficient electronic equipment, reduced release of greenhouse gases, adoption of higher quality agro-food products (organic food — integrated control, DOP, IGT certifications), more efficient waste disposal modalities.
In particular, in adhering to this project, the Municipality of Turin aims to explore the potential for eco-innovation and identify a series of improvement criteria to be applied to future school catering tenders.
Of strategic importance within the project are the activities of tender analysis and discussions with market players, to be conducted with a view to developing further guidelines for the adoption of tangible and feasible measures within the context of the City of Turin, leading to the implementation of a measurable low CO2 emission catering model.
Of special interest are following areas:
— Transport system: complex IT systems to organize and rationalize transport plans and monitor their punctual implementation by means of vehicle-mounted GPS tracking systems (i.e., complex IT systems to organize and rationalize transport plans, GPS systems for monitoring purposes, eco driving);
— Food packaging: primary, secondary and tertiary packaging by means of solutions designed to achieve environmental savings and/or facilitate separate waste collection;
— Eco-friendly tableware (plates, cups), disposable but compostable and highly sustainable; multipurpose but light-weight, durable and hygienically safe (no ceramic and no glass), made from plastic materials or other innovative substances, compostable, ultra-light, durable and hygienically safe;
— Energy efficient appliances (gas cookers, heated food counters, dishwashers, refrigerators, etc.);
— Short supply chains for white meats, dairy products, etc.

For a more exhaustive analysis of the demand for eco-innovation in the collective catering sector, we are organising discussions between trade operators that supply goods and services pertaining to the collective catering supply chain, at national and international levels, and are interested in contributing to an analysis of the developments currently underway in this sector, in terms of reduced overall environmental impact and enhanced service efficiency.
Dedicated consultations on these issues will get underway with a seminar, to be held in Torino on the 15.4.2015 (in the morning) on the innovative aspects of the specifications used at present, followed by a discussion on the topics of interest, with a special focus on possible environmental innovations in school catering services.
Furthermore, on the 14th of April and on the 15th April (afternoon), interested companies will also be able to meet the project managers and present their eco-innovative solutions in the areas described above within some targeted 1:1 meetings.

— Environmental management systems.
